6 Links of "The Greek God" sausage from SausageWorks
1 large red onion, sliced
1 large red pepper, sliced
1 large yellow pepper, sliced
4 cloves garlic, minced
½ tsp fresh oregano
½ tsp fresh thyme
32 kalamata olives pitted and slice in ½
8 oz. feta cheese
4 tbs balsamic vinegar
¼ cup of olive oil, divided
½ box rigatoni pasta
Directions
Place "The Greek God" sausage in a large saute pan, add enough water to just cover the sausage. Bring to a boil and boil for 10 minutes.
While the sausage is cooking prepare pasta according to directions on package.
When the sausage is finished cooking drain water out of the pan. Return pan to the stove, over medium/high heat with 2 tablespoons of olive oil and cook until browned. When browned remove the sausages from the pan, place them on a cutting board to rest.
Return pan to the stove, add peppers, onion, oregano, thyme and garlic (if needed add a little more olive oil to coat). Cook on medium heat until onions and peppers are soft, remove from heat.
Slice the sausage on a diagonal into 1/2 inch pieces. Add the sausage and olives to the peppers and onions cook for 2-3 min allowing flavors to meld.
Whisk the remaining olive oil and balsamic vinegar in a small bowl. In a large bowl toss the sausage, olives, onions, peppers, pasta, 1/2 of the feta cheese and balsamic mixture.
Plate and sprinkle with the remaining feta cheese.
